FlightGear
FlightGear is a free, open-source flight simulator that has been in development since 1997. It's available on Windows, macOS, and Linux.
FlightGear sits firmly in the simulation camp rather than arcade flying. It prioritizes realism over accessibility, so it's closer to a serious hobby or training tool than a casual game. That said, it's absolutely something you can enjoy for fun.
